"exposing people in “western” countries to Chinese culture"
The problem is that the plot makes no sense:
After successfully escorting Tang Sanzang and recovering the Buddhist scriptures, Sun Wukong ascends to Buddhahood, but ultimately rejects life in the Celestial Court, instead choosing to live on his mountain in peace.
Firstly, in the actual mythos, Buddhas are not part of the Celestial Court in the first place! Secondly, this is just a reiteration of the Wukong vs Celestial Court arc which happened before the main quest:
However, the Celestial Court is angered that Sun Wukong would disobey them, and sends an army led by Erlang Shen to force him to return to the Court.
All this happened once already! Why would it play out all over again?? (And even if for the sake of argument we suppose the Celestial Court would try to force Wukong (now a Buddha) to work for them, then would it not be trying to force all the other Buddhas to do the same??)
"lack of women"
Oriental Legend 2 is especially strong in female representation (5 out of 10 in the playable cast):

(Xiaolongnu and Ziyi aren't even from JTTW but still made it into the game!)
"trans characters"
Here is a 90s RPG:
which outright reimagined Wujing as female:

Gender-swapping characters was not considered controversial back in the Counterculture era! (I already mentioned Miss X in the past:
https://trueleft.createaforum.com/enemies/matt-walsh/msg16622/#msg16622 . And don't get me started about:
https://darkstalkers.fandom.com/wiki/Midnight_Bliss
) Westerners who presume gender-swapping is a recent development are totally ignorant!
(Heck, Starzinger (also inspired by JTTW) was from the 70s and reimagined Sanzang as female:
Princess Aurora ... The only human among the main four characters. She is the last of the Moon people. Aurora is based on Tang Sanzang.
And again, there was no controversy whatsoever. Why would there be?

"online rightists, many of which would otherwise despise China and make racist comments about Chinese people, are willing to side with the developers on this issue, and parade them as heroes fighting against wokeness and DEI."
Yes, which is why we should not recognize Black Myth: Wukong as truly Chinese, but should on the contrary disdainfully label it as "New Chinese".
